Capture the unique citrusy flavor of fir tips in the spring by making an infused sugar. Fir tip sugar can be used to bring a delightful flavor and color to drinks and desserts.
1 cup sugar
1 cup fresh fir tips or spruce tips
1. Blend sugar and fir tips together in a food processor until thoroughly combined, about 2-3 minutes, stopping the processor a few times to scrape down the sides.
2. Use sugar within a day or two. If not using immediately, you should dry out your fir tip sugar so that it doesn't ferment and spoil. Spread fir tip sugar out onto a baking sheet and place in the oven on its lowest setting (around 180°F). Bake until dry and crispy to the touch. Break up any clumps with your fingers and store in a clean dry jar.
