Trail Mix Cookies

Chewy on the outside, gooey on the inside, and exploding with all the best chunky add-ins – these cookies have it goin' on.

Ingredients
 

  • 8 ounces unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 cup sweet rice flour
  • 1/2 cup oat flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups quick oats
  • 1 1/2 cups trail mix
  • 1/4 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350° F. Line 2 cookie sheets with parchment paper.
  • In a small saucepan, melt the butter. Set it aside and allow to cool slightly.
  • In a medium bowl, combine sugars. Add melted butter and whisk until mixture is thoroughly emulsified and pulling away from the edges of the bowl, 2-3 minutes.
  • Add eggs and vanilla; whisk to combine.
  • Combine flours, baking soda, salt, and oats together in a separate bowl. Add dry ingredients to wet ingredients and fold together gently until thoroughly mixed. Fold in trail mix and chocolate.
  • Scoop onto prepared baking sheets, about 2 inches apart. Bake until golden brown around the edges but still just slightly gooey in the center, 11-13 minutes.
