Fig Leaf Syrup

With a flavor that's reminiscent of fresh figs, vanilla, and a touch of coconut, this is a very special syrup to have on hand.

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 4-5 fresh fig leaves rinsed & patted dry

Instructions

  • Mix: Place 1 cup sugar and 1 cup water in a small sauce pot. Stir to combine, turn on heat to medium, and cook until mixture comes to a low boil.
  • Simmer: Turn heat down and simmer until sugar is completely dissolved, about 3-5 minutes. Turn off heat.
  • Infuse: Add 4-5 fig leaves to the syrup and cover with a tight-fitting lid. Allow them to infuse in the syrup until it cools completely, about 1 - 1 ½ hours.
  • Strain into a clean jar, squeezing fig leaves to extract as much syrup as possible.
  • Enjoy: Keep syrup refrigerated and use for cocktails, mocktails, and desserts.

Notes

This recipe is easily adjusted. Feel free to use this as a general ratio, and adjust the batch size to make less or more syrup, depending on your needs.
A 1:1 simple syrup can keep in the refrigerator for about 3-4 weeks. A rich syrup (2:1 ratio) keeps for up to 6 weeks in the fridge.
