The perfect classic thick and crunchy peanut butter cookie, made just a lil' better by adding chocolate chips.
8 ounces unsalted butter, very soft
1 cup brown sugar
1 cup granulated sugar
1 1/4 cups peanut butter (creamy, crunchy, or a mix of both)
2 eggs
1 tablespoon vanilla
2 3/4 cups all purpose flour
1 1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 cups chocolate chips or chopped chocolate
1. Preheat the oven to 350° F and line two baking sheets with parchment paper.
2. Cream the butter and sugars together until light and fluffy, 2-3 minutes. Add peanut butter; beat in well. Add eggs, one at a time, mixing in throughly. Add vanilla.
3. Mix dry ingredients (flour, salt, baking powder & baking soda) together in a separate bowl. Add dry ingredients to butter mixture and fold just until combined. Fold in chocolate.
4. Scoop rounds of cookie dough onto parchment lined sheet pans, about two inches apart. Use a fork to press into the cookie dough in a traditional criss-cross pattern. Bake until lightly golden, about 9-11 minutes, rotating halfway through.
