Peanut Butter Bar
8ouncesunsalted buttersoft
1cupsugar
1cupbrown sugar
2eggs
1teaspoonvanilla
2/3cuppeanut butter
1/2teaspoonsalt
1teaspoonbaking soda
2cupsall purpose flour
2cupsold fashioned oats
Chocolate Glaze
1cupchocolate chips
Peanut Butter Glaze
1/4cuppeanut butter
1/2cuppowdered sugar
2tablespoonsmilk
Instructions
For the peanut butter cookie bar:
Butter a 9x13 inch baking pan. Preheat oven to 350° F.
Cream butter and sugars together in a large bowl. Add eggs and vanilla, stirring thoroughly to combine.
Add peanut butter; stir in.
Add flour, salt, baking soda, and oats. Mix until just combined.
Spread batter into prepared pan. Bake until golden brown and center is cooked through, about 20-30 minutes.
For the chocolate:
When cookie bar is baked, turn the oven off and pull cookies out. Distribute chocolate chips evenly on top and place back in the oven for a couple of minutes, until chocolate is melting.
Remove from oven and use a butter knife or the back of a spoon to spread the chocolate evenly across the top. Allow cookies to cool before drizzling with peanut butter glaze.
For the peanut butter glaze:
Whisk together peanut butter, powdered sugar, and milk.*
Drizzle evenly over the chocolate. Swirl if desired. Slice and serve!
Notes
*For the glaze: Depending on what type and brand of peanut butter you use, you may need to adjust the glaze a bit. Add more powdered sugar to make the frosting thicker, or more milk to make it thinner.
