Trail Mix Cookies
Chewy on the outside, gooey on the inside, and exploding with all the best chunky add-ins - these cookies have it goin' on.

- 8 ounces unsalted butter melted
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 1/2 cups all purpose flour
- 1/2 cup sweet rice flour
- 1/2 cup oat flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups quick oats
- 1 1/2 cups trail mix
- 1/4 cup dark chocolate chips
Preheat oven to 350° F. Line 2 cookie sheets with parchment paper.
In a small saucepan, melt the butter. Set it aside and allow to cool slightly.
In a medium bowl, combine sugars. Add melted butter and whisk until mixture is thoroughly emulsified and pulling away from the edges of the bowl, 2-3 minutes.
Add eggs and vanilla; whisk to combine.
Combine flours, baking soda, salt, and oats together in a separate bowl. Add dry ingredients to wet ingredients and fold together gently until thoroughly mixed. Fold in trail mix and chocolate.
Scoop onto prepared baking sheets, about 2 inches apart. Bake until golden brown around the edges but still just slightly gooey in the center, 11-13 minutes.
